Simple Lemon pepper Salmon with roasted potatoes, tenderstem broccoli & asparagus.

Asparagus is filled with antioxidants you need to fight all those free radicals, a very good source of fiber, folate, vitamins A, C, E and K.

This dish is made all in the pan, each item added in at different times. Little effort required and not much washing to do either!

Ingredients

  • Side of Salmon (500g)

  • 8 baking potatoes

  • 1 Pack tenderstem broccoli

  • 2 Packs asparagus

  • 3 cloves of garlic (crushed)

  • 2tsp rock salt

  • 2tsp black pepper

  • 1tsp Chilli flakes

  • 2 lemons

  • 2tsp parsley

  • 1tsp rosemary

  • Olive oil


Preparation

  1. Wash the side of salmon and gently pat down with a kitchen town to ensure the salmon is nice and dry.

  2. Begin to season the salmon, in a small bowl crush the cloves of garlic, add 1 whole zest of a lemon, 2tsp olive oil, 2tsp salt, 2tsp black pepper, 1tsp chilli flakes and 2tsp parsley. Mix the seasoning together and smother all over the salmon.

  3. Place the salmon to one side to marinade for 20 minutes until it’s time for it to go in the tray with the potatoes.

  4. Thoroughly wash the potatoes then chop them up into medium chunks. Once cut up, wash them again to remove the starch and place them onto the baking tray.

  5. While the potatoes are in the baking tray, season they with salt, pepper, 1tsp rosemary, a drizzle of olive oil and half of a zested lemon. Give them a good mix, ensure all the potatoes are coated with the seasonings.

  6. Place the potatoes in the oven at 180 degrees heat and bake for 20 minutes. After this time they should be cooked inside and starting to brown up on the outside.

  7. Take the potatoes out and place the salmon on top over the potatoes.

  8. Add the baking tray back into the oven and cook for another 15 minutes before taking it out to add the veg.

  9. Finally take the tray out, add the veg and bake for 5-7 minutes until the vegetables are cooked and the salmon has fully cooked.
