Stuffed roast plantain

This recipe is a great quick post workout meal that you can whip up in just under 30 minutes. It’s so simple but full of an array of flavours with each mouthful. Its low in fat, high protein meal that is perfect for those who are trying to shed some weight or those who want to bulk up but do it in a healthy way.

Turkey is also packed with selenium, zinc, and phosphorus. Selenium helps your body produce thyroid hormones, which regulate your metabolism.

The plantain can be steamed or boiled rather than roasting if you prefer. Although plantain has hardly any protein, it is loaded with good fibres that your body will need to promote good bowel regularity. The fibre can also help lower your cholesterol, which in turn keeps your heart functioning at its best.

Ingredients

  • 250g Lean turkey mince

  • 4 Ripe plantain

  • 1 Red onion

  • 1 Red bell pepper

  • 2 Cloves of garlic

  • 2 Tablespoons of coconut aminos (can substitute for 1 Tablespoon balsamic vinegar)

  • 1tsp Rock salt

  • 2tsp Black pepper

  • 1tsp Dried thyme

  • 1tsp Smoked paprika

  • 1tsp Chilli flakes

  • Olive oil


Preparation

  1. First chop both ends of the plantain and peel the outer skin off. Drizzle with a little olive oil then place on a lined baking tray and roast whole in the oven for 20 minutes.

  2. Add 1 tablespoon of olive oil to a pan and heat up on besoin heat. Add the turkey mince and lightly fry for 5 minutes, (stirring constantly) until all the mince has browned.

  3. Once the mince is cooked, crush 2 cloves of garlic, sliced red onions and finely sliced red peppers.

  4. Season the mince with salt, pepper, thyme, chilli flakes, smoked paprika and 2 tablespoons of the coconut aminos. Mix well and after 3-4 minutes turn the heat off.

  5. When 20 minutes is up remove the plantain from the oven, slice it down the middle to create an opening and fill with the mince. Add a side salad or steamed veg and enjoy.
