Quinoa vegan stir fry with roasted plantain

  • 160g Sweetcorn (tinned)

  • 150g Chestnut mushrooms

  • 1 Red bell pepper

  • 1 Large red onion

  • 1 Large chopped courgette / zucchini

  • 250g Sugar snap peas

  • 1 Plantain

  • Black pepper

  • Rock salt

  • Coconut oil

  • Olive oil
