Grilled Salmon in a Cajun butter cream sauce with capers

This salmon recipe is a one of my all time favourite creamy recipes. It’s gives you creamy, spicy and tangy at the same time. The flavours are insane, however you don’t need to invest so much time in preparing this dish. As many who follow my recipes will know I don’t like to spend too much time cooking and so I make sure the majority of my meals take no more than 30 minutes.
So if you’re after a quick and simple salmon recipe this one is for you.
This recipe pairs perfectly with mash potatoes, pasta or brown rice.


Ingredients

  • 4 Salmon fillets

  • 250ml Coconut cream

  • 2 Tablespoons of capers

  • 2 Tablespoons non dairy butter

  • 1 Lemon

  • 1tsp Dijon mustard

  • Handful of fresh parsley

Cajun seasoning:

  • 1tsp Smoked paprika

  • 1/2tsp Rock salt

  • 1tsp Garlic granules

  • 1/2tsp Black pepper

  • 1/2tsp Ground white pepper

  • 1tsp Onion powder

  • 1/2tsp Dried oregano

  • 1tsp Cayenne pepper

  • 1/2tsp Thyme


Method

  1. Firstly place all the Cajun seasoning herbs and spices and place into a pestle and mortar (a large bowl will do if you don’t have a pestle & mortar), grind the spices together and set aside.

  2. Wash the salmon and pat each fillet down to dry.

  3. Using half of the Cajun rubb in the bowl, season the salmon fillets on each side.

  4. Grill the salmon fillets on a griddle, 1-2 minutes on each side just until you have some nice chard lines on them, remove from the pan and set aside while you make your sauce.

  5. To a large pan add the coconut cream, butter, Dijon mustard, 100ml of water and the rest of the Cajun seasoning. Mix and allow to simmer for 5-6 minutes.

  6. Once the sauce has slightly thickened, squeeze the juice of half a lemon to the sauce, followed by fresh capers and chopped parsley.

  7. Lastly add the Salmon fillets to the sauce and allow to simmer for another 5 minutes to allow all the flavours to mingle.

  8. Serve on a bed of some mash potatoes, pasta or brown rice.
